Indo-Chinese fusion of the quintessential Mumbai street food Pav Bhaji, a flavor packed spicy mashed potato gravy, chock full of vegetables and infused with Schezwan chutney and a special masala powder called “Pav Bhaji Masala” powder. Served with some fluffy butter glazed and roasted pav bun, it is a street food to die for!
Ingredients:
4 medium sized potatoes
1 medium onion, chopped
1 medium sized tomato, chopped
1 green chilli/jalapeno (optional)
3 cloves of garlic
¼ cup chopped green onions (white and green portions)
½ cup chopped cabbage
½ cup chopped mushrooms
½ cup chopped carrots
½ cup chopped bell pepper/capsicum
1 tsp Kashmiri red chilli powder
½ tsp turmeric powder
2 tsp Pav Bhaji Masala Powder (I have used Everest Pav Bhaji Masala Powder)
2 tbsp Schezwan Chutney (I have used Chings Secret brand)
1 tsp sugar
Salt to taste
1 tbsp butter
2 tbsp oil
Green onions for garnishing

Lemon wedges
Finely chopped onions
