A very popular dish in Norther part of India , specially in Nepal, Darjeeling, Sikkim and Tibet. Locals call it Choila, where a buffalo meat is smoked and grilled with Indian spices. It has a very aromatic taste of basic spiceslike fenu greek, garlic, ginger and red chili.
Ingredients:
2 lbs. buffalo meat (preferably Round top, Sirloin, tenderloin)
1.5 ounces of diced onions
few chopped cilantro
half teaspoon fenugreek seeds
4-5 dried red chili peppers
half teaspoon turmeric
half teaspoon cinnamon powder
1 tablespoons lemon juice
1 tablespoon garlic paste
1 tablespoon ginger paste
Salt and Pepper
2 tablespoons mustard oil
Method:
Broil the meat in the oven for 30 minutes in low heat(15 minutes each sides) and heat mustard oil in the frying pan, add fenugreek seeds and red chili pepper until dark brown. once the meat is cooked cut it into small pieces and mix it with smashed garlic, ginger, and red chili pepper and In a large bowl. Add fried fenugreek seeds, onions, cilantro, salt pepper, cinnamon powder, turmeric powder, and mix it evenly.
