Marble Sooji Dhokla

Holi is also known as the festival of colors in India. It is also referred to as the festival of love and compassion. Celebrations are typically marked by the splashing of colors on family and friends. It is a spring festival and perhaps the happiest and most colorful religious festival of the Hindus.
Marble Sooji Dhokla is made of sooji with all natural color. I used beetroot for pink color, haldi for yellow color,palak or spinach for green color.

Ingredients:

White Batter –
Sooji – 1/2 cup
Dahi – 1/2 cup
Finely chopped green chilli – 1
Half lemon juice
Salt to taste
Pink Batter –
Sooji – 1/2 cup
*Beetroot Puree – 1/2 cup
Finely chopped green chilli – 1
Half lemon juice
Salt to taste
Eno – 1/2 tsp
Green Batter –
Sooji – 1/2 cup
* Palak Puree – 1/2 cup
Finely chopped green chilli – 1
Half lemon juice
Salt to taste
Eno – 1/2 tsp
Yellow Battter –
Sooji – 1/2 cup
Dahi – 1/2 cup
Haldi – 1/2 tsp
Besan – 1 tbsp
Finely chopped green chilli – 1
Half lemon juice
Salt to taste
Eno – 1/2 tsp
Tempering :
Rai – 1/2 tsp
White sesame seeds – 1 tbsp
Oil – 1 tbsp
Water – 1/4 cup
Oil for greasing dhokla pan.
