Mushroom Fried Rice

An Indo-Chinese flavored fried rice with mushrooms, carrots and bell peppers in soy sauce.

Ingredients:

½ cup rice
¼ cup finely chopped onions
2 tablespoons whites of green onions, finely chopped
1 teaspoon finely minced ginger
1 teaspoon finely minced garlic
2 green chillis/jalapenos
1 dry red chilli (optional)
1 cup finely chopped mushrooms
¼ cup grated carrots
2 tablespoons finely chopped bell pepper/capsicum
3 tablespoons finely chopped green onions
1 to 2 teaspoons soy sauce (adjust according to your taste)
½ to 1 teaspoon white vinegar (adjust according to your taste)
3 tablespoons sesame oil or any cooking oil
Salt to taste
Black pepper powder
