Dum Pukht Chicken Biryani

this is a recipe for steam cooked chicken biryani.


750 grams chicken500 grams basmati rice250 grams yoghurt4 medium onions5 tablespoons freshly chopped coriander3 tablespoons of fresh lemon juice10 tablespoons cooking oil5 tablespoons of chopped fresh mint3 green chilli1 bay leaf2 inch piece of cinnamon5 cloves10 black peppercorns1 black cardamom4 green cardamoms10 dried plums3 tablespoons of milk1 tablespoon of garlic paste2 tablespoons of ginger paste1 and a half teaspoons of crushed coriander1 teaspoon of crushed cumin4 tablespoons of salt1 and a half teaspoons of red chilli powderhalf teaspoon of turmeric powder1 teaspoon of food colour( this gives strong colouring, you can use less)1 teaspoon of rose water1 teaspoon of kewra water
