Super moist cupcakes that has a deep red color from the lovely beets puree..
Ingredients:
for cupcakes
pureed beets (boiled until tender, then pureed) 3/4 cup
olive oil 1/3 cup
milk 1 cup
brown sugar 1 cup, packed
vanilla extract 1 1/2 tsp
all-purpose flour + wheat flour 1 1/4 cup
salt 1/8 tsp
semisweet cocoa powder 1 1/2 tbsp
baking powder 1 1/2 tsp
for filling
ricotta cheese 1/4 cup
butter 1/4 cup
powdered/icing sugar 1 cup
vanilla extract 1 tsp
