Sabudana Kheer is a sweet pudding made by boiling sago with either water or milk and adding sugar and sometimes additional flavorings. It is made in many cultures with varying styles, and may be produced in a variety of ways. Tapioca pudding is similar in that it too can be made using pearl tapioca but is generally made using flake tapioca in the north which results in a finer, more grainy, consistency.
Ingredients:
1/4 Cup Sago soaked for 3-4 hours5 Cups Milk1/4 Cup Sugar10-12 AlmondsSaffron a pinch1/4 tsp Green cardamom powder
Method:
1. Heat the milk in a deep non stick pan. Add the saffron and mix.2. Cook on low heat till the milk thickens a little.3. Add the Sabudana to the milk and cook, stirring, till the Sabudana is fully cooked and the kheer thickened.4. Add almonds, sugar and green cardamom powder and mix well. Serve it hot or chill and serve.
