out of all Chaats, the crunchy, tangy, hot and sweet flavour of the papdi chaat is the all time favorite of mine. Crispy Flat puris or Papdis topped with cheakpeas, potatoes and other sprouts and flavored with spicy green chutney and sweet and sour tamarind chutney , curd and garnished with crispy sev is delicious to eat as a snack or an alternative to a full meal. You can feel the burst of flavor in your mouth as you bite into the crunchiness of the Papdi, sweetness of the yogurt, tanginess of the red chutney, spice from the green chutney and the heavenly flavor of the homemade chaat masala.

Ingredients:

For the Papdi:
All Purpose Flour 2 cups
Ajwain seeds 1 tsp
Oil 2 tbsps
Water as needed

For the Chaat Masala:
Cumin seeds 1 tbsp
Ajwain seeds 1/4 tsp
Ginger powder 1 tsp
Red chilli powder 1 tsp
Black pepper powder 1 tbsp
Asafoetida or hing 1/4 tsp
Rock salt 1 tbsp
Cloves 5
Amchur powder 1 tbsp
Dried mint leaves 1 tbsp

For the Green Chutney:
Mint leaves 1 cup
Fresh coriander leaves 1 cup
Green chillies 2
Ginger 1/2 inch
Lime juice 1/2 tsp
Cumin powder 1/2 tsp
Chaat masala 1/2 tsp
Salt
Water as needed

For Tamarind chutney:
Seedless tamarind 1/2 cup
Ginger powder 1/2 tsp
Red chilli powder 1/4 tsp
Asafoetida 1/4 tsp
Seedless dates 1/4 cup
Salt
Oil 1 tsp
Water as needed

For The filling:
Boiled and cubed potatoes 1 cup
Boiled and cubed sweet potatoes 1 cup
Boiled chickpeas 1 cup

For garnishing:
Thin sev 1 cup
Chopped Coriander leaves 1 cup
Thick yogurt 1 cup
