This time of the year my heart and mind is all about the lunch box, after school snacks and bits and bites. I wanted to tinker with some kind of savory cookie but nimkis or the classic savory Bengali crackers were on my mind.
I did not want to deal with all the frying and my son wanted something cheesy, well he always wants something cheesy.. So, these baked Parmasan Nimkis were created. They are a savory diamond shaped cookie, that might just bring home some down home memories.
11/2 cups all purpose flour
4 tablespoons salted butter plus more for greasing the baking sheet
1 cup freshly grated Parmesan cheese
Salt to taste
1 teaspoon sugar
1 teaspoon cayenne pepper
4 to 6 tablespoons ice cold water
11/2 teaspoons nigella seeds
