Handvo

Handvo (pronounced /’haand-vo/) is a traditional vegetarian, vegan (see recipe note) and gluten-free Gujarati snack that can essentially be described as baked spicy lentil cakes made from a fermented batter mixed with spices and a vegetable such as zucchini, spinach or cabbage.

Ingredients:

Batter:
3 cups rice (white or brown)
1 cup tuvar daal (split yellow lentils)
1 cup urad daal
1/2 cup moong daal (split green lentils)
1/2 cup chana daal
1 tablespoon Greek Yogurt (OMIT to make vegan)
Vegetables:
2-3 zucchini (shredded)
1/2 head cabbage (finely shredded)
3-4 cups spinach (finely chopped)
2-3 jalapenos (finely ground, add according to taste)
Spices:
salt to taste
1/2 tspn turmeric (hardar)
4 cloves garlic (finely chopped)
2 tablespoons ginger (ground)
1/2 tspn baking powder
1 tspn Eno
red chili powder (laal marchu) (to add heat)
Vagar (Tadka):
1/4 cup avocado oil
2 tspn mustard seeds (rye)
3-4 curry leaves (limbdo)
4 whole dry red chili peppers
2 tspn sesame seeds
1/4 tspn asoetafida (hing)
whole sesame seeds
