Muthia is a traditional dish from Gujarat. It’s generally prepared using chickpea flour and fenugreek leaves (methi) or lauki (bottle gourd). I tweaked it and added oats and wheat to add a variation. I also used kohlrabi here because a new way to try a vegetable is always great, right?
Preparing Muthia is not a very hard thing – just requires throwing in some wheat/oat/chickpea flour(besan) together with some spices and veggies and steaming the dough. Once the dough is steamed, you chop it into bite-sized pieces and drizzle some seasoning on top 🙂 How easy does that sound! The preparation takes less than 10 minutes and then you let the steamer do its job.
Ingredients:
3/4 cup wheat
1/2 cup oats
1/4 cup chickpea flour/besan
1/2 inch piece of ginger
1 green chilli (optional)
1 tsp red chilli powder
1 tsp cumin powder
1/2 tsp coriander powder
2 tbsp yogurt
2 kohlrabi
2 tbsp oil
1 tsp mustard seeds
1 tsp sesame seeds (optional)
Pinch of hing (asafoetida)
1 tbsp fresh grated coconut
Handful of chopped cilantro
