Sweet and Spicy Amchur Ki Launji

This time of the year around summer, Sweet and Spicy Amchur Ki Launji is simmering in most of the kitchens of the neighbourhood. Ever since I was a child, Amchur Ki Meethi Chutney always fascinated my taste-buds. It is so hard not to scoop a chunk of launji from the jar using your fingers and lick it. But we used to relish Amchur Ki Launji in a refined manner as well by spreading it in between the Paratha or Puri.

Ingredients:

200 gram whole dried mango slices (sabut amchur)
100 gram jaggery crushed
6 – 8 dates, soaked in warm water overnight and then sliced
1/4 Cup raisins
Salt to taste
5 – 6 dried red chili
1 tsp red chili powder
1 1/2 tsp dried ginger powder (saunth)
2 tsp cumin seeds
1 tsp coriander seeds
1/4 tsp fenugreek seeds (methi dana)
1 tsp oil
