Indian halwa is a stove-top pudding made by slowly cooking and reducing grains, flour, vegetables or even fruit in ghee, milk and some kind of sweetener. This particular recipe uses a humble vegetable, the lauki or doodhi (bottle-gourd or calabash) to create this beautiful and delicious pastel-hued halwa. It is simple enough to make on a weekday and fancy enough to serve on special occasions.
Ingredients:
Lauki/bottle gourd – 2 medium-sized (3 – 3.5 cups when grated)
Ghee – 4 tbsp
Milk – 1 cup
Sugar – 7-8 tbsp
Cardamom powder – 1/4 tsp
Salt – a pinch
Golden raisins – 10-12
Cashew nuts and almonds – 8-10, each
