KIWI CUCUMBER COOLER

A pitcher of cool, refreshing kiwi and cucumber makes any summer party a little more special. This refreshing cooler can be prepared up to a day in advance. This drink is incredibly refreshing and cooling and perfect for picnics, cookouts and hot days at the beach. So, in the spirit of summer, hot weather and all things cool and refreshing, I’m sharing this thirst-quenching Kiwi Cucumber cooler recipe to cool down the hot summer.

Ingredients:

4 kiwifruit
2 large cucumber
Juice of 1 lime or 3 tablespoon lime juice
3 to 6 teaspoon of sugar syrup or honey
8 to 10 fresh mint leaves
400 ml or 3 cups of chilled water
1 teaspoon Black salt
Lime , Cucumber wedges and few mint leaves for garnishing
Ice cubes and crushed ice to serve

Method:

Peel and roughly chop the kiwis, retain a few slices to garnish. Clean and cut the cucumber into round pieces, retain a few slices for garnishing and blend the rest in a food processor along with the kiwi pieces.
Strain the mixture through a strainer and keep aside. Add the lemon juice, sugar syrup, salt and 4 cups of chilled water to the kiwi cucumber mixture and pour in a pitcher.
Roughly crushes the mint leaves and add to it. Add sliced cucumber and kiwi in it and while you prepare the glasses, keep this mixture in the freezer.
To serve, place a few mint leaves at the bottom of the glass, then fill the glass with crushed ice. Pour the kiwi cucumber cooler carefully to fill up the glass . Garnish with lemon slices and a sprig of mint leaves and serve immediately with a stirrer.
Serve absolutely chilled.
