Egg Masala

This delicious recipe for egg masala with red peppers and green peas is easy to make and a great accompaniment with rice and flat breads.

Ingredients:

Oil – 2 tbsp
Mustard seeds – ½ tsp
Cumin seeds – ½ tsp
Whole dried red chilies – 2
Curry leaves – a few
Onion – 1 large, finely sliced or chopped
Ginger – 1 tbsp, finely chopped
Garlic – 2 large cloves, minced
Green chili – 1, cut into rounds
Turmeric powder – ¼ tsp
Red chili powder – 1 tsp
Coriander powder – 1½ tsp
Cumin powder – ½ tsp
Garam masala powder – ½ tsp
Tomato – 1 large, chopped
Red bell pepper – 1, seeded and sliced
Green peas – ½ cup
Salt – to taste
Lime juice – 2 tsp
Cilantro leaves – a few stalks, roughly torn
Eggs – 6, boiled and peeled
