Akuri – the Parsi scrambled egg

Akuri is the perfectly scrambled eggs for the Indian palate – tad spicy, creamy, hint of coriander. It forms a perfect breakfast dish or a snack sitting neatly on top of a crisp toast.


Eggs – 4
Milk – 2 tbsp.
Onion – 1 large (chopped very finely)
Tomato – 1 medium (finely chopped)
Fresh coriander leaves – 1/4 cup (very finely chopped)
Green chilli – 1 0r 2 (deseeded and very finely chopped)
Ginger and garlic paste – 1 tsp
Turmeric powder – 1/2 tsp
Coriander powder – 1/2 tsp
Cumin powder – 1/2 tsp
Red chilli powder – 1/2 tsp
Salt to taste
Refined vegetable oil – 1 tbsp
