Three Chicken Chinthamani

Just three ingredients and you are set to impress your diners.


•1 tablespoon olive oil
•20-25 dry red chillies (plus more if you like it super spicy), broken to pieces
•2 large red onions, finely chopped
•1 tablespoon salt to taste
•1 pound boneless chicken thigh or use chicken thigh with bones (but carefully slice the meat as this will leave enough oil to cook them), chopped into small cubes
