Move over, carrot cake. You have a worthy competitor in the form of these chewy carrot bars or gajar ki burfi. Chock-full of the freshest winter carrots cooked in milk and sugar, and decorated with nuts, this recipe is really easy to make and a real treat. Plus, you can say you had vegetables for dessert!
Ingredients:
Ghee – 3 tbsp
Carrots – 2 – 2 1/2 cup, grated or chopped finely
Milk – 1 cup
Cardamom powder – 1/2 tsp
Sugar – 1/2 cup
Salt – a pinch
Golden raisins – 2-3 tbsp
Toasted almonds or cashew nuts – 14-16
